scones
Ingredients, makes 12
8 oz / 2 cups self-raising powder
1 teaspoon baking powder
2 oz / ¼ cup butter
1 oz / 5 ts caster sugar
5 oz / 2/3 cup milk
To serve : butter or whippet cream & jam
How to ?
Preheat the oven to 220°C (425F). Dust a baking sheet with flour. Sift the flour and baking powder into a bowl and stir to mix. Rub in butter and stir to mix. Rub in butter and stir in sugar.
Make a well in the mixture and pour in milk. Using a knife, mix together until dough is soft, but not sticky. Turn onto a floured surface and knead lightly. Pat dough out to a thickness of 1 cm (½ in).
Using a 2 in round cutter, cut out 12 scones. Arrange on prepared baing sheet and dust the tops with flour. Bake in the oven for 10 minutes. Remove to a wire rack and cover with a cloth while cooling.
